I believe its quite hard finding a great storebought granola, so when I discovered how easy it was to make my own homemade granola, I did not hesitate to start baking. This is a basic recipe, so feel free to add whatever nuts, seeds or dried fruit you like.

150g oats
100g coconut flakes
100g mixed nuts (I used almond slices, hazelnuts and wallnuts)
50g raisins
50g dried cranberries
1 tbsp cinnamon
1 dash salt
2 tbsp coconut oil
4 tbsp honey
1 tbsp chia seeds

Preheat your oven to 160 degrees. Line a baking sheet with parchment paper. Mix together oats, coconut flakes, nuts, cinnamon, salt and chia. On a low heat melt the honey and coconut oil and stir it into the oaty mixture with a wooden spoon until everything’s lightly coated. Poar the mixture onto a baking tray and spread out roughly with the wooden spoon. Place the tray in the preheated oven and bake for about 30 minutes, until the mixture is crunchy and a golden brown. Let it cool off and fill into a storage jar together with the raisins and cranberries. Serve with greek yoghurt and fresh fruit or whatever you like.
